Grilled Hawaiian Pizza

Drizzle prepared "crust" of your choice (such as 1 Golden Home Ultra Crispy & Ultra Thin Pizza Crust or 2-3 Flatout Wraps, Toufayan Whole Wheat Flatbreads or Stonefire Tandoori Naans) with olive oil, sprinkle with salt and pepper and crushed red pepper flakes. Top with 8 oz. shredded mozzarella, 1 cup chopped pineapple, 1/4 cup thinly sliced red onion, 2 oz. thinly sliced and torn prosciutto. Grill pizzas 1-2 at a time (as space permits) directly over high heat, lid down, rotating crust 90° when dark grill marks form (2-3 minutes total). Slide pizza to unlit (cool) side of grill. Let stand, lid down, until cheese is melted and bubbly (about 2 minutes). Top with roughly chopped fresh cilantro and drizzle with additional olive oil, if desired.
