Parmesan-Crusted Chicken Breasts
PARMESAN-CRUSTED CHICKEN BREASTS
Brush boneless skinless chicken breasts with egg white; press into 1 cup of finely grated Parmesan cheese. Melt 2 tbsp. butter in sauté pan over medium heat; sauté chicken until cooked through (15-20 minutes), turning halfway through.
Microwave potatoes about 10 minutes. Be sure to poke with a fork before you begin.
ASPARAGUS WITH FRESH LEMON
Microwave spears in 1/4 cup water 6-9 minutes; drain. Squeeze fresh lemon juice over spears.
