Spicy Bacon & Egg Rolls
SPICY BACON & EGG ROLLS
Spray cut sides of 4 Kowalski’s Sweet Egg Buns with cooking spray; toast, cut side down, on a nonstick griddle for a few minutes until dark golden-brown. Spread cut sides of buns with Lee Kum Kee Sriracha Mayo. Layer bottom bun with cooked bacon, pepper jack cheese, fresh baby spinach leaves or Bibb lettuce, sliced tomatoes and sliced avocado; set aside. Spray a nonstick skillet with cooking spray and place over medium heat. Add 4 eggs; cook until whites are nearly set; flip and cook just until whites are done. Place eggs on sandwiches; cover with top bun. Serve immediately.
