Going to the lake is a memorable tradition of Minnesota's past and present. A cabin up north, secluded from the rest of world, feels like a little slice of heaven. It's a time for families and friends to take a break from their hectic schedules, to enjoy each other's company and spend quality time with the ones we love. But going up north would not be the same without the comforting meals that bring everyone together. It's those three meals each day that we all look forward to most. Three meals that can turn any day into a special day; bring your family closer together, sharing good food without the stress and hassle from back home.
Foods For More Than One Meal
Planning one meal is complicated enough. Trying to organize meals for a whole weekend is even tougher. By using the same ingredient for more than one meal you can save time, money and shorten your grocery list. Here's a menu for five different meals in three days; all delightfully simple and delicious:
DINNER 1: Grilled Chicken - Grill all the chicken Friday night; serve Grilled Chicken with BBQ Sauce (keeps up to five days in the fridge or can be stored in the freezer). Serve with grilled corn on the cob and baked potatoes.
BREAKFAST 1: Bacon, eggs, pancakes and fruit.
LUNCH: Curried Chicken Salad Sandwich, chips, fruit and veggies.
DINNER 2: Bacon Cheeseburgers, potato salad (made from leftover baked potatoes), roasted vegetables (made from leftover veggies from lunch).
BREAKFAST 2: Overnight Sweet Rolls with fruit salad (made with left over fruit). Make the rolls ahead on Saturday night so they are ready to bake in the morning.
Spread the Responsibility
Everyone should be able to relax and enjoy the weekend. By giving guests or family members the responsibility for one meal, you will make the weekend more stress-free, and it can even be a fun activity or competition for your family. Each team plans the menu for that meal and is in charge of getting the ingredients and preparing the food. Be sure to communicate with each other what everyone's planning on making so none of the ingredients are duplicated and some foods can be shared. That way you don't end up with three bottles of ketchup and four bags of chips!
