Champagne Punch for Your Holiday Gatherings

A glass of Champagne is an elegant way to celebrate just about any occasion, but toasting the New Year with a glass of "bubbly" seems most fitting. If you are hosting a gathering during the holidays and want to offer a Champagne toast but are scared off by the expense, why not try a Champagne punch?
1/2 cup water
Bring 1/2 cup water and sugar to a boil in a small saucepan, stirring until sugar dissolves; simmer 5 min. Cool syrup completely. Combine Champagne, rum and pomegranate juice in punch bowl. Add enough syrup to sweeten to taste. Mix in lemon slices, pomegranate seeds and mint leaves; add ice block to bowl. Serves 12.
This recipe is a great alternative that combines pomegranate juice and Champagne for a punch that is fitting for the holiday season. It includes an ice block for the punch bowl that will keep the mixture perfectly chilled. To make the ice block, fill a metal bowl or fluted bundt pan with water and freeze overnight. Adding fresh mint leaves, slices of citrus fruit or pomegranate seeds will also add interest to the ice block. Just before serving, let the ice block defrost just long enough to loosen it from the mold and slip it into the punch.
