Pork Tenderloin with Apricot Glaze

PORK TENDERLOIN WITH APRICOT GLAZE
Brush tenderloin with olive oil; roast in a preheated 400° oven 15 minutes. Brush tenderloin on all sides with melted apricot preserves; continue roasting until slightly pink in the center (about 5 minutes). Let rest; slice and serve.

TWICE BAKED POTATOES
Purchase in the Deli; reheat in a 350° oven (15-20 minutes).

ROASTED BRUSSELS SPROUTS
These tiny-looking heads of cabbage are drizzled with a blend of olive and canola oil, seasoned simply with salt and pepper, then roasted to perfection. Pick them up in the Deli Service Case.
