Spinach and Goat Cheese Scrambled Eggs
SPINACH AND GOAT CHEESE SCRAMBLED EGGS
For every 2 eggs, sauté a large handful of chopped fresh baby spinach in 2 tsp. unsalted butter until completely wilted, then add your seasoned, uncooked beaten eggs and approximately 1 oz. of crumbled soft fresh goat cheese. Cook and stir as you would to make eggs alone. (Remove eggs from the pan while still glossy and slightly soft, as they will continue to cook for up to a minute once removed.)
For best results when cooking bacon on the stovetop, use medium-low heat and turn often. We dare you to not sneak a slice before it gets to the table!
