Kabobs with Summer Veggies and Quinoa

KALBI-MARINATED BEEF KABOBS

SUMMER VEGETABLE SAUTÉ
Toss 1/4" slices of Minnesota-grown zucchini and yellow squash with a bit of olive oil in a nonstick skillet over medium-high heat. If desired, add garlic, sliced grape tomatoes and basil ribbons in the last 1-2 minutes of cooking to kick things up a notch. Don't forget to season with a touch of kosher salt and lots of freshly ground black pepper.

PEANUT BUTTER SMOOTHIE
Combine 2 cups nonfat plain Greek yogurt, 2 cups chocolate almond milk (or chocolate soy milk), 4 frozen chopped bananas and 1/4 cup Kowalski's Creamy Peanut Butter in a blender and process until smooth.
