Sesame-Crusted Pork Chops
SESAME-CRUSTED PORK CHOPS
Sprinkle both sides of 4 pork chops with salt and pepper. Brush one side of each chop lightly with sweet orange marmalade and coat in a mixture of white and black sesame seeds. Sauté chops, seed side down, in 2 tbsp. olive oil in a nonstick ovenproof skillet until golden. Flip chops; transfer pan to a preheated 350° oven until pork reaches desired doneness (8-10 minutes to reach about 140°). Remove chops from pan; tent with foil and let rest 5 minutes before serving.

In a cocktail shaker filled halfway with ice, shake 2 1/2 oz. simple syrup (sugar dissolved in an equal amount of water), 1 oz. rum, 1 oz. Cointreau and the juice of 1 lemon until cold. Serve over ice and top with a splash of club soda. Repeat for additional cocktails.
