Spaghetti Carbonara

SPAGHETTI CARBONARA
Whisk 3 eggs and 1/2 cup grated Parmesan cheese in an extra-large mixing bowl. Season generously with fresh cracked black pepper. Set aside. Prepare 1 lb. spaghetti according to package directions, reserving a cup of the hot pasta water when draining the pasta. Add drained pasta to the bowl with the egg mixture and stir vigorously and quickly to distribute the heat evenly through the eggs and to melt the cheese. Add hot pasta water as needed (you can use as little or as much as you want) to create the desired consistency of sauce. Serve with additional Parmesan cheese and fresh chopped parsley, if desired. (Note: You can also add cooked crumbled bacon, peas, chicken or other mix-ins, if desired.)
