Perfect Pork Chops and Maple Melon Salad

PORK CHOPS
Season 4 (1" thick) pork chops with salt and pepper. Arrange chops on a clean grill or grill pan preheated to high; cook, turning once when dark grill marks form and meat releases easily from grill grates, until slightly pink in center and meat reaches an internal temperature of 140° (10-14 minutes total). Remove from heat and tent with foil for 10 minutes before serving.

MAPLE MELON SALAD
Top fresh cut cantaloupe with Maple Vinaigrette, toasted nuts and a few
sprigs of fresh watercress. Sprinkle with sea salt and black pepper.

BLACK FOREST PARFAITS
Mix 2 cups frozen pitted sweet cherries with 1/2 tsp. cornstarch; microwave 3 minutes.
Mash cherries to desired consistency. Layer cherry mixture with low-fat vanilla yogurt,
crushed chocolate wafer cookies and whipped topping, if desired.
