Healthy Red Snapper and Quinoa
BROILED RED SNAPPER
Find this and several other great fresh fish options in the Seafood Department. Snapper takes just minutes to cook under your oven’s broiler. Drizzle with olive oil and season with salt and pepper, then broil it skin-side-down until it is opaque throughout and flakes easily with a fork. Top your cooked fish with some salsa, dill dip or plain yogurt mixed with a little lemon juice if you like!
ANCIENT HARVEST INCA RED QUINOA
This heirloom grain is ready in just 15 minutes. It’s gorgeous and good for you! Also look for Ancient Harvest Harmony Tri-Color Blend Quinoa in the Grocery Department.
Find quick-cooking Birds Eye Steamfresh Vegetables in the Frozen Foods Section. Toss the hot florets and stems with a drizzle of Stonewall Kitchen Sweet Basil Oil, also great for dipping one of our great fresh-baked artisan breads.
CHUNKY TOMATO AND MANGO SALAD WITH FETA
Combine halved cherry or grape tomatoes, chopped mango, sliced radishes, thinly sliced red onion and peeled sliced cucumber with fresh French feta cheese (find it in the Imported Cheese Department). Drizzle with Kowalski’s Extra Virgin Olive Oil and fresh squeezed lime juice to taste. Season with freshly ground Kowalski’s Sea Salt and Black Peppercorns to taste. Garnish with chopped fresh cilantro, if desired.
