Healthy Grilled Salmon

GRILLED SALMON
Brush salmon lightly with oil and season with salt and pepper. Grill fish, skin side down, over high heat until flaky and fillet measures 125° (10-15 minutes, depending on thickness of fish).

ROASTED GARLIC CAULIFLOWER
Toss ¾" cauliflower florets with a bit of olive oil and a generous amount of roughly chopped garlic; sprinkle with salt and pepper. Roast on a baking sheet 25-30 minutes in an oven preheated to 450°, until the cauliflower starts to get dark on the edges and is tender when pierced with a fork.
