Cheese of the Month - June 2014

This month Kowalski's is featuring The Stag Cheddar. The Stag is handcrafted for The Artisan Cheese Exchange by Master Cheesemaker Kerry Henning in Kiel, Wisconsin. It is bandage-wrapped and Deer Creek's "The Stag" Cheddarshelf-cured in wooden boxes,developing bits of crystalline crunch that add rich texture to an intensely bold flavor with hints of toffee and butterscotch that ends in a slightly sweet finish. The Stag won first place in the Aged Cheddar (12-24 month) category at the 2013 American Cheese Society Competition and was also named one of the "101 Best Cheeses of the Year" by Culture Magazine.
