Healthy Greek Grain Salad
GREEK GRAIN SALAD
Toss 2 ½ cups precooked whole grain (such as farro or freekeh) with 2 tbsp. olive oil, 2 tbsp. fresh squeezed lemon juice and 1 tsp. dried oregano. Season with salt and pepper. In a large mixing or salad bowl, combine as much halved grape tomatoes, chopped peeled cucumber, rinsed and drained garbanzo beans, red onion, chopped Italian parsley and green onion as desired. Season vegetables with salt and pepper; let stand 10 minutes. Add tomato mixture to grain mixture; toss gently to combine. Serve with ½ cup (2 tbsp./serving) Litehouse Greek Dressing (find it in the Produce Department with the refrigerated dressings) and Stonefire Garlic Whole Grain Naan (from the Deli).
