Grilled Pork Chops with Easy Cherry Sauce

GRILLED PORK CHOPS WITH EASY CHERRY SAUCE
Season 4 pork chops with salt and pepper. Arrange chops on a clean grill or pan preheated to high; cook, turning once when dark grill marks form and meat releases easily from the grates, until slightly pink in center and meat reaches an internal temperature of 140° (10-14 minutes total). Remove from heat and tent with foil for 10 minutes before serving. While chops rest, combine 1/2 cup cherry preserves and 2 tbsp. rice vinegar in a small microwave-safe bowl; heat in 10-second intervals until jam is loose and ingredients are easily whisked together. Stir in a pinch of crushed red pepper flakes. Spoon half of warm sauce over pork as it rests and pass the remainder for dipping.

GRILLED SWEET CORN
Remove silks and husks, except the husk layer touching kernels; soak in water 1 hour. Grill over medium heat, covered, for 8-10 minutes, turning occasionally. Don't forget the butter and salt!
