Sandwich of the Month: September 2014

They've only just returned to the classroom, but your kids are probably bored with their lunchboxes already! Solve this problem with our Moroccan Chicken Sandwiches. Loaded with sweet, salty, spicy and tangy tastes and crunchy, chewy and crispy textures, this is a sandwich that will keep any kid's attention. You can even send the salad and pita separately to give kids something fun to do at the lunch table!

This is also a Good Foods for Good Health recipe, so you know your little learners will be properly fueled for whatever their afternoon brings!

1/2 cup chicken stock
1 tbsp. ground coriander
1 ½ tsp. ground cardamom
1 ½ tsp. ground cinnamon
1 cup dried chopped apricots
1 ½ cups shredded Kowalski's Signature
    Rotisserie Chicken
1 cup canned petite diced tomatoes,
1/3 cup chopped pitted green olives
1/4 cup raw, finely chopped almonds
2 tbsp. Kowalski's Extra Virgin Olive Oil
1 tbsp. red wine vinegar

- kosher salt and Kowalski's Coarse Ground
    Black Pepper, to taste
1 cup plain Greek yogurt
3 tbsp. fresh lemon juice
2 tbsp. chili powder
2 tbsp. finely chopped fresh Italian parsley
1/2 tsp. cumin
1/2 tsp. caraway seeds
- dash cayenne pepper
4 (1 oz. loaves) whole-grain pita bread, such as
    Joseph's Flax, Oat Bran and Whole Wheat Pita
2 cups prewashed mixed baby greens

Moroccan Chicken SandwichesWarm stock in the microwave; whisk in coriander, cardamom and cinnamon and pour over apricots in a large mixing bowl. Set aside for 10 min. Add chicken, tomatoes, olives, almonds, oil and vinegar to apricot mixture; season with salt and pepper to taste and set aside. In another small mixing bowl, whisk yogurt with next 6 ingredients through cayenne; season with salt and pepper to taste. Cut a pocket in each pita; spread one side of each pocket with some yogurt mixture. Stuff each pita with an equal amount of greens and chicken mixture. Drizzle with extra yogurt mixture and serve immediately.

Note: For picnics, separately tote the prepared chicken mixture, yogurt dressing, greens and pita breads; quickly assemble sandwiches when it's time to eat.
