Roasted Green Salsa

Makes about 1 cup
Ingredients: 
  • 1 cup husked, quartered tomatillos
  • 1 large poblano pepper, stemmed and seeded, chopped into 1" pieces
  • 1/2 red onion, peeled, chopped into 1" pieces
  • 1 jalapeño pepper, stemmed and seeded, chopped into 1" pieces
  • 3 cloves garlic, peeled
  • 1 tbsp. canola oil
  • 1/4 cup chopped fresh cilantro
  • 1 tbsp. fresh squeezed lime juice
  • - kosher salt and coarse ground black pepper, to taste
Instructions: 

Toss first 5 ingredients with oil. Roast on a parchment-lined rimmed baking sheet in a preheated 500° oven until very tender (about 15 min.). Pulse vegetables in a food processor with cilantro and lime juice until desired consistency is reached. Add water to thin salsa, if desired. Season to taste.
