Fresh Mozzarella Pesto Bites

Makes 24

24 baguette slices, sliced on the diagonal

- olive oil

1/2 cup prepared pesto

6 oz. Kowalski's Fresh Mozzarella, cut in 24 thin triangular slices

24 roasted red pepper strips (about 1" x 1/2")


Place baguette slices on a jelly roll pan; brush with olive oil. Bake in a preheated 375° oven until crisp and brown (8-10 min.). Spread baguette toasts with pesto. Top each with a piece of fresh mozzarella and a red pepper strip.
