Gorgonzola-Stuffed Figs with Red Wine Syrup

Serves 8
  • 2 cups red wine
  • 24 dried figs
  • 1/4 cup sugar
  • 24 slices Prosciutto di Parma, thinly sliced
  • 3 oz. Gorgonzola cheese, in 24 chunks
  • - chopped fresh chives
  • - red grapes, sliced in half lengthwise

In a small saucepan, bring wine to a boil. Lower heat and add figs; simmer until figs are tender (about 5 min.). Remove figs and set aside. Add sugar to the wine in the saucepan; simmer until reduced to 1/2 cup; remove from heat and set aside. Fold each prosciutto slice in half to make 4 ½ x 4" rectangles. Remove stem and cut an “x” in the top of each fig; stuff opening with cheese. Place a stuffed fig in the center of each prosciutto rectangle. Wrap a piece of prosciutto around each fig. Drizzle a serving plate with wine reduction and set wrapped stuffed figs on top. Drizzle with additional syrup; garnish plate with chives and red grapes.
