Spanish Apple Skewers

Ingredients

16 thin slices pancetta or serrano ham
1 Honeycrisp apple (or similar variety), peeled and sliced into 16 wedges
16 (2 x ½") pieces young Manchego cheese (about 3 oz. total)
16 sprigs fresh rosemary, about 4" long each (or toothpicks)

Directions
  1. Wrap 1 slice of pancetta around an apple wedge and a piece of cheese; secure with a rosemary sprig or toothpick.
  2. Repeat with remaining pancetta, apples, cheese and rosemary.
  3. Preheat a grill pan to medium heat.
  4. Grill skewers on preheated grill pan, turning once when grill marks form; continue grilling, turning occasionally, until pancetta is crispy and cheese is warm and very soft (about 5 min. total).
  5. Serve immediately.
