Easy Zucchini Crostini

Ingredients

1 tbsp. Extra Virgin Olive Oil
1 pkg. (10 oz.) Kowalski's Zucchini Veggie Noodles
- kosher salt and freshly ground Kowalski's Black Peppercorns, to taste
¾ cup Kowalski's Signature Herb Spread
24 prepared crostini
- chopped fresh Italian parsley and finely minced red onion, for garnish

Directions
  1. In a medium skillet, heat oil over medium-high heat until shimmering.
  2. Add zucchini; cook, stirring occasionally, until golden-brown and fork-tender (2-4 min.).
  3. Season with salt and pepper; allow to cool for 10 min.
  4. Spread herb spread on crostini; spoon vegetable mixture on top.
  5. Garnish with parsley and red onion.
