Muir Glen® Fire-Roasted Tomato Florentine

Serves 4
  • 1 (28 oz.) can Muir Glen® Fire-Roasted Whole Tomatoes, cut in half, rinsed, drained
  • 2 tbsp. grated Parmesan cheese
  • 2 tbsp. grated Romano cheese
  • 2 tbsp. olive oil, divided
  • 2 tbsp. plain or seasoned dry breadcrumbs
  • 1 medium onion, chopped (1/2 cup)
  • 3 cloves garlic, finely chopped
  • 1 (10 oz.) pkg. Cascadian Farm® Frozen Organic Chopped Spinach, thawed, squeezed to drain
  • 1/8 tsp. ground nutmeg
  • - salt and pepper, to taste

Place tomatoes in a 9"" square baking dish. In small bowl, stir together cheeses, 1 tbsp. olive oil and bread crumbs; set aside. In a 10"" skillet, heat remaining tablespoon oil over medium heat. Cook onion and garlic in oil 1 min. Stir in spinach; cook 2 min. longer. Season with nutmeg, salt and pepper; set aside. Spoon spinach mixture evenly over tomatoes. Sprinkle with cheese mixture. Bake in a preheated 400° oven until the tops are golden-brown and tomatoes are hot (15-20 min.).
