Savory Muffins with Ham, Cheddar and Olives

Serves 6
  • 1 cup flour
  • 4 eggs
  • 6 tbsp. olive oil
  • 4 tbsp. dry white wine
  • 2 tsp. baking powder
  • 1 cup ham cut into 1" cubes
  • 1 cup grated Cheddar cheese
  • 3/4 cup chopped green olives
  • 1/2 cup scallions
  • - salt and pepper, to taste
  • 12 large PaperChef Parchment Baking Cups

Combine flour and baking powder in a large mixing bowl; form a well in the middle. Place the eggs in the center of the well. Whisk the eggs slowly; incorporate the flour while adding the oil, then add the wine to obtain a uniform batter. Add the rest of the ingredients; stir well. Pour mixture into muffin tins or individual ramekin dishes lined with baking cups. Bake in a preheated 350° oven until golden (15-20 min.). Allow muffins to rest for 20 min. before serving.
