Mocha Cream Bites
- 1 (8 oz.) container mascarpone cheese
- 1/2 cup whipping cream
- 2 tbsp. Dutch process cocoa
- 3 tbsp. sugar
- 1/4 cup Kahlúa
- 1/4 cup cold strong coffee
- 12 Kowalski's Shortbread Cookie Bites, finely crushed
- - chocolate covered espresso beans
In large mixer bowl, beat mascarpone and whipping cream until soft peaks form. Add cocoa, sugar, Kahlua and coffee, beating until well blended. Spoon 2-3 tbsp. cookie crumbs into bottom of each of 6 (4") glasses. Spoon chocolate mixture evenly over crumbs; sprinkle with remaining crumbs.
To Serve: Garnish with chocolate covered espresso beans.
