Cherry-Peach Clafouti

Serves 8
  • - butter
  • -sugar
  • 1 cup thinly sliced peaches
  • 1 cup pitted fresh cherries
  • 3 eggs
  • 1 vanilla bean
  • 1 1/2 cups half-and-half
  • 1/2 cup flour
  • 1/2 cup sugar
  • 1/8 tsp. salt
  • 1 tbsp. cream sherry, if desired
  • - whipped cream

Lightly butter 10" round baking dish; dust bottom of dish with sugar. In large mixer bowl, beat eggs until foamy (about 2 min.). Split vanilla bean in half; scrape seeds into the eggs. Add remaining ingredients, except whipped cream, mixing to combine. Gently pour batter over fruit. Bake in a preheated 350° oven until knife inserted in center comes out clean and top is golden-brown (20-25 min.); cool slightly.

To Serve: Cut into wedges; top with dollop of whipped cream.

Good to Know: If using frozen fruit, thaw and drain well before arranging in dish.
