Basic Recipe for Ice Cream Sandwiches
4 ct. pkg. Kowalski's Cookies, any flavor
1 pint ice cream, any flavor
- sprinkles or other crushed candy, etc., for rolling (optional)
Put cookies in the freezer for 3-4 hrs. to harden. Allow ice cream to soften at room temperature for 3-5 min. Scoop 1/2 of ice cream on top of the bottom of a cookie; sandwich another cookie on top, bottom side to the ice cream. Press cookies together to distribute ice cream; smooth edges with the back of a spoon. Repeat with remaining cookies and ice cream. Roll in or sprinkle candy on exposed ice cream around the edges of the sandwiches. Wrap sandwiches in waxed paper and freeze 4 hrs. or until solid. Let stand at room temperature 5-10 min. before serving.
DIPPED COOKIE VARIATION: Melt approx. 4 oz. (roughly 1/2 cup) Kowalski's Dark Chocolate Melts (in the Grocery Department near the chocolate chips) in a microwave-safe dish, in 30 sec. increments, stirring between heatings, until smooth. Dip half of cookie, or lightly and evenly spread melted chocolate on 1/2 of each cookie (top and bottom, plus edges). Place cookies on wax paper; allow to harden completely (2-3 hrs).
