Dessert Off The Grill

Serves 8
  • 3/4 cup butter
  • 3/4 cup brown sugar
  • 1 (10.75 oz.) pkg. frozen all butter pound cake, cut into 8 slices
  • 2 peaches, peeled, pitted, cut into wedges
  • 1 banana, peeled, sliced
  • 6 pineapple rings, cut into quarters
  • 8 strawberries, quartered
  • - vanilla ice cream

In a small saucepan over medium heat, melt butter. Add brown sugar, stirring to dissolve. Spray grill rack and grill basket with non-stick cooking spray. Preheat grill to MEDIUM heat. Lightly brush each side of pound cake slices with butter-brown sugar mixture. In medium bowl, drizzle remaining mixture over fruit, tossing to coat. Using direct heat cooking method, grill cake slices until each piece has light grill marks (2-3 min.); turn and continue grilling 1 min. longer. Place fruit in grill basket; grill until fruit is caramelized (3-4 min.), stirring occasionally.

To Serve: Arrange slice of cake on dessert plate; top with scoop of vanilla ice cream and grilled fruit. Serve immediately.
