Chocolate Mascarpone Cups

Serves 6
  • 3/4 cup superfine sugar
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1 tsp. vanilla
  • 3 oz. pkg. chocolate dessert shells
  • 1 cup fresh raspberries
  • - dark chocolate, melted

In large mixer bowl, combine first 4 ingredients. Beat at high speed until sugar is dissolved and mixture thickens (DO NOT OVERBEAT). Spoon 1/3 cup mixture into each shell. Top with raspberries; drizzle with chocolate.
