Maple-Pumpkin Mousse

Serves 4

Ingredients

15 oz. (1 ¾ cups) canned pumpkin purée (not pie filling)
8 oz. soft tofu
¼ cup Kowalski's Pure Maple Syrup, plus 1 ½ tsp. for drizzling
1 ¼ tsp. Kowalski's Pumpkin Pie Spice
- pinch salt
1 tbsp. chopped pistachios, for garnish

Directions
  1. In the bowl of a food processor, combine pumpkin, tofu, maple syrup, pumpkin pie spice and salt; process until combined (about 1 min.).
  2. Refrigerate, covered, for at least 4 hrs. to overnight.
  3. Drain excess liquid that has accumulated on top of mousse; stir and scoop into individual serving dishes.
  4. Drizzle with syrup; sprinkle with pistachios.
