Tofu Cream Dessert

Serves 9
  • 12 graham cracker halves, crushed
  • 2 tbsp. granulated sugar
  • 1/4 cup melted butter
  • 8 oz. tofu, drained
  • 4 oz. Neufchatel cream cheese
  • 2 eggs, beaten
  • 1/2 cup sugar
  • 1/2 tsp. vanilla
  • 2 cups sliced strawberries
  • - sugar

In a small bowl, thoroughly combine graham cracker crumbs and 2 tbsp. sugar; stir in butter to evenly coat crumbs. Press into bottom of 8x8" pan. Puree tofu in bowl of food processor until creamy; add remaining ingredients and process until thoroughly combined. Pour over crumbs. Bake in a preheated 350° oven until set (20-25 min.); cool completely. In small bowl, combine strawberries and sugar to taste.

To Serve: Cut into squares; spoon strawberries over top. Serve immediately.
