Totally Tubular Brownies

Ingredients

¾ cup flour
⅓ cup cocoa powder
1 ½ tsp. instant espresso powder
½ tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
¼ cup canola oil
1 cup sugar
1 large egg
¼ cup full-fat yogurt (such as The Greek Gods Honey Flavored Greek Yogurt)
¾ tsp. Kowalski's Organic Madagascar Vanilla Bean Paste
¼ cup plus 1 ½ tsp. stout beer
- confectioners' sugar or Easy Chocolate Glaze, for finishing

Directions
  1. Preheat oven to 350º.
  2. In a large mixing bowl, whisk together first 6 ingredients (through salt); set aside.
  3. In another large mixing bowl, completely whisk together oil, sugar, egg, yogurt and vanilla.
  4. Add wet ingredients to dry ingredients; stir to combine.
  5. Stir in beer; mix until well combined.
  6. Lightly spray a 9" metal baking pan with cooking spray; line bottom only with parchment paper.
  7. Pour batter into bottom of pan; bake in preheated oven until a toothpick inserted in the center comes out with just a few moist crumbs attached (28-30 min.).
  8. Remove from oven; let cool in pan for 30 min.
  9. Remove brownies from pan; cool to room temperature before serving.
  10. Sprinkle with confectioners' sugar or glaze with Easy Chocolate Glaze; cut into 9 pieces for serving.
  11. Store at room temperature, covered, for up to 1 week.
