Pepper Avocado Salsa

Ingredients: 
  • 1/3 cup chopped sweet red pepper
  • 1/3 cup chopped yellow pepper
  • 1/3 cup chopped orange pepper
  • 1 bunch green onions, sliced
  • 1 jalapeño pepper, seeded, diced
  • 1 avocado, peeled, cubed
  • 1 oz. pkg. fresh cilantro, chopped (about 1/4 cup)
  • 1 tbsp. minced garlic
  • 1/4 cup fresh squeezed lime juice
  • 2 tbsp. Kowalski's Extra Virgin Olive Oil
  • 2 tbsp. superfine sugar
  • 1 tsp. kosher salt
  • 1 tsp. lime zest
Instructions: 

In a medium mixing bowl, combine the first 8 ingredients. In a separate small mixing bowl, combine remaining ingredients; pour dressing over pepper mixture, gently stirring to combine. Refrigerate several hrs. before using.
