Indian Roasted Cauliflower (Ghobi)

Serves 6
  • 1/4 cup olive oil
  • 1 tsp. ground coriander
  • 1 tsp. ground cumin
  • 2 tsp. cumin seeds
  • 1 tsp. ancho chile powder
  • - kosher salt, to taste
  • 1 large head of cauliflower, chopped

In a large mixing bowl, whisk together oil and spices (through salt). Add cauliflower; toss with oil until evenly coated. Bake on a parchment-lined baking sheet in a preheated 450° oven until cauliflower is dark on the edges and tender when pierced with a fork (about 15 min.).
