Spiced Orange Yogurt Parfaits

Serves 6
  • 1/2 cup water
  • 1/4 cup honey
  • 1/4 cup fresh squeezed orange juice
  • 1/4 tsp. Kowalski's Coarse Ground Black Pepper
  • - grated zest of 1 orange, plus extra for garnish
  • 2 cups Kraft Cool Whip Free
  • 2 cups Athenos Plain Greek Nonfat Yogurt
  • 12 oz. fresh blueberries, raspberries or blackberries (or any combination),
        washed and completely air-dried, some reserved for garnish
  • 1/4 cup chopped, toasted Kowalski's Walnuts, a few reserved for garnish
  • - small mint sprigs for garnish

In a small saucepan over medium-high heat, bring water, honey, juice, pepper and zest to a boil. Reduce heat to medium-low; simmer until reduced to about 1/2 cup (8-10 min.). Remove from heat; cool 10 min. In a medium mixing bowl, whisk yogurt until smooth; gently fold in whipped topping. Divide half of yogurt mixture among 6 (6 oz.) glasses. Top yogurt evenly with berries and nuts; drizzle with roughly half of the syrup. Top glasses evenly with remaining yogurt and syrup. Garnish with berries, reserved nuts, zest and mint sprigs. Serve immediately.
