Anytime Bran Muffins

Makes 4

2 cups water

2 cups Post 100% Bran Cereal

1 cup shortening

2 1/2 cups sugar

4 eggs, beaten

1 qt. buttermilk

4 cups All Bran Cereal

5 cups flour

1 tsp. salt

5 tsp. baking soda

- dried cherries (optional)

- dried cranberries (optional)


Bring 2 cups water to a boil; pour boiling water over 100% Bran. Cream shortening and sugar; add eggs. Beat until fluffy. Stir in buttermilk and All Bran. Mix flour, salt, soda and add alternately with Bran and water mixture. Fold in dried fruit, if desired. Store in refrigerator up to 8 weeks. Bake in a preheated 400° oven until browned (25-30 min.).

Good to Know: You can bake any number, even one at a time, for fresh muffins whenever you want them!
