Fajita Burgers

Serves 4
  • 1/2 red bell pepper, cut into strips
  • 1/2 yellow bell pepper, cut into strips
  • 1/2 orange bell pepper, cut into strips
  • 2 slices sweet yellow onion, separated
  • 1 tbsp. Kowalski's Extra Virgin Olive Oil
  • 1/2 tsp. kosher salt
  • 1 ¼ lbs. Kowalski's Premium All Natural 85% Lean Ground Beef
  • 1-2 tbsp. Kowalski's Chili Powder
  • 4 slices Monterey Jack cheese
  • 4 hamburger buns
  • 4 tbsp. sour cream, divided
  • 1/2 cup shredded lettuce, divided
  • 4 tomato slices

In a medium bowl, combine first 6 ingredients; set aside. In a large bowl, combine ground beef and chili powder; shape into 4 patties. Place pepper mixture in a grill basket; grill over high heat until softened, stirring several times. Grill patties, covered, to a minimum internal temperature of 160° (4-5 min. per side). Top with cheese during last 3 min. of grilling. Spread cut side of top buns with sour cream; top with lettuce. Place burgers on bottom buns; top with tomato slice and grilled peppers.
