Kowalski's Italian Mussels

Ingredients
24 oz. jar Kowalski's Classic Marinara Pasta Sauce
1 cup chicken broth
4 lbs. mussels, cleaned and debearded
- garnishes, to taste: shaved Kowalski's Parmesan Cheese, chopped fresh Italian parsley, Kowalski's Extra Virgin Olive Oil and freshly ground Kowalski's Sea Salt and Black Peppercorns
- sliced baguette, for serving
Directions
  1. In a large stockpot, bring pasta sauce and broth to a simmer over medium-high heat.
  2. Add mussels; cover pot and cook until almost all shells are open (about 5 min.); discard any shells that do not open.
  3. Garnish individual servings with cheese, parsley, a drizzle of oil and a few grinds of salt and pepper to taste.
  4. Serve with bread for dipping.

 

Tasty Tips:

  • To prepare mussels for cooking, scrub them under running water with a stiff brush to remove any sand. Remove fibrous "beard," if any. Pinch or tap open mussels before cooking. If an open shellfish won't snap shut, it should be discarded.
  • You can microwave any unopened mussels for 15-30 sec. until they open. Doing so will prevent overcooking of the bulk of your mussels.
