Scallops Bacques

Serves 2
  • 1 tbsp. olive oil
  • 8 oz. bay scallops
  • 1 Roma tomato, seeded, diced
  • 1/4 red bell pepper, diced
  • 1/4 green bell pepper, diced
  • 1/4 cup sliced black olives
  • 2 tbsp. finely chopped red onion
  • 1 tbsp. crushed garlic
  • - rice or pasta of your choice

In large skillet, heat olive oil over medium heat. Stir in scallops and cook until white (4-5 min.), stirring occasionally. Add the remaining ingredients and toss a few times to incorporate flavors. Continue cooking for 2 min. or until all ingredients are hot. Serve immediately over rice or pasta.
