Roasted Strawberry, Brie and Chocolate Grilled Cheese

  • 6 strawberries, stemmed, hulled and quartered
  • 1/2 tsp. canola oil
  • - pinch of salt
  • 2 tbsp. softened unsalted butter
  • 4 thick slices multigrain bread, such as Kowalski's Whole Grain Artisan Bread or Pumpkin Seed Artisan Bread
  • 2-3 oz. Brie Cheese, sliced
  • 1-2 oz. high-quality chocolate, very finely chopped

In a small mixing bowl, toss strawberries with oil and salt; spread on a baking sheet. Roast in a preheated 375° oven 20 min. Heat a large skillet or griddle over medium-low heat. Butter one side of each slice of bread. Place 2 slices on the skillet, buttered side down; layer each with cheese, chocolate, roasted strawberries and more cheese. Top sandwiches with remaining bread, buttered side up; cook until cheese starts to melt (2-3 min.) and bottom is crispy and golden. Gently flip the sandwich and cook until the second side is golden. Serve immediately.
