Caprese Panini Sandwiches

Makes 2
  • 2 Kowalski's 7" Ciabatta Rolls
  • 1/2 cup Cibo Naturals Sun-dried Tomato Pesto, divided
  • 1 (3 oz.) pkg. sliced prosciutto, divided (optional)
  • 1 container Kowalski's Fresh Mozzarella Cheese, cut into 1/4" thick slices
  • - fresh basil, cut into shreds
  • - Cucina Viva Classic Balsamic Cream, or Balsamic Syrup (recipe link below)
  • - Kowalski's Extra Virgin Olive Oil

Cut each ciabatta in half horizontally; spread cut edges with sun-dried tomato pesto. Layer bread with prosciutto and fresh mozzarella slices; sprinkle with basil and balsamic cream or our recipe for Balsamic Syrup. Place top half of ciabatta roll over fillings; brush top and bottom of roll with olive oil. Grill on a panini press until grill marks form and mozzarella begins to melt (3-4 min.). Serve immediately.
