BLT and Egg Sandwiches

1/2 cup mayonnaise

3 tbsp. finely chopped chives

12 slices bread, toasted

4 hard-cooked eggs, thinly sliced, seasoned with salt

4 medium tomatoes, thinly sliced

1 lb. bacon, cooked crisp

- red-tipped leaf lettuce


In small bowl, combine mayonnaise and chives; spread 4 slices of toast with chive mayo and top with half of egg, tomato, bacon and lettuce. Spread both sides of 4 more slices of toast with mayo and place on top. Cover with remaining egg, tomato, bacon, lettuce and toast. Secure sandwiches with long frill pick; cut in half on the diagonal. Serve immediately.
