BLT and Egg Sandwiches

Makes 8 half-sandwiches
  • 1/2 cup mayonnaise
  • 3 tbsp. finely chopped chives
  • 12 slices bread, toasted
  • 4 hard-cooked eggs, thinly sliced, seasoned with salt
  • 4 medium tomatoes, thinly sliced
  • 1 lb. bacon, cooked crisp
  • - red-tipped leaf lettuce

In a small bowl, combine mayonnaise and chives; spread 4 slices of toast with chive mayo and top with ½ of egg, tomato, bacon and lettuce. Spread both sides of 4 more slices of toast with mayo and place on top. Cover with remaining egg, tomato, bacon, lettuce and toast. Secure sandwiches with long frill pick; cut in half on the diagonal. Serve immediately.
