Lemon Dill Caprese Salad

Serves 4

1/4 cup Kowalski's Extra Virgin Olive Oil

1 tbsp. fresh-squeezed lemon juice

1/2 tsp. snipped fresh dill

1 lb. Kowalski's Fresh Mozzarella, cut into 12 slices

12 spears fresh asparagus, blanched, cut in half lengthwise

1 tsp. lemon zest

8 grape tomatoes, cut in half


In small bowl, combine first 3 ingredients; set aside. On each of 4 individual salad plates, arrange 3 slices of fresh mozzarella; top each with 6 half spears of asparagus. Sprinkle with lemon zest; drizzle with lemon dill vinaigrette. Garnish each plate with 4 tomato halves.
