Citrus-Dressed Grilled Chicken and Greens Salad

Ingredients: 
  • 1/2 cup fresh squeezed orange juice
  • 1 tbsp. superfine sugar
  • 1 tbsp. Champagne vinegar
  • 1 tsp. Dijon mustard
  • 1/2 tsp. kosher salt
  • 5 oz. organic baby romaine salad
  • 2 boneless skinless chicken breasts, grilled, cut into strips on the diagonal
  • 6 oz. pkg. gourmet snow peas, ends trimmed
  • 1 cup Kowalski's Roasted and Salted Cashews
  • 1/2 cup julienne-cut Kowalski's Dried Mango Slices
  • 1 cup hulled sliced strawberries
  • 3 red onion slices, quartered, separated into strips
Instructions: 

In a small mixing bowl, whisk together first 5 ingredients; refrigerate, covered. In a large salad bowl, combine remaining ingredients. Drizzle dressing over salad; serve immediately.
