Feta Celebration Salad

Very Easy
Serves 4
  • 1/2 lb. Mt. Vikos Basket Feta
  • 1/2 cup sliced red bell pepper
  • 1/2 cup sliced yellow bell pepper
  • 1/2 cup peeled, cubed cucumber
  • 1/2 cup pitted Kalamata olives
  • 1/2 cup diced Roma tomatoes
  • 1/4 cup sliced purple onion
  • 1/2 cup extra virgin olive oil
  • 1/2 tbsp. oregano
  • 1 lemon
  • - salt and black pepper, to taste

Toss all ingredients together except lemon. Cut lemon in half; use zest of half lemon and juice of the other. Add to salad just before serving. Season with salt and pepper to taste. (Use caution with salt. Feta is cured in a salt brine solution, which can be very salty.)
