Herb Vinegar

Ingredients: 

2 cups white or red wine vinegar

1 cup chopped fresh basil, tarragon, rosemary, oregano, cilantro or fresh herb of choice

Instructions: 

In small saucepan, heat vinegar and herbs over medium heat just until the liquid simmers or reaches a temperature of 180°; remove from heat, cover and steep 1 hr. Strain; refrigerate in a tightly closed jar with 1 sprig of fresh herb.

To Serve: Drizzle over vegetables or salad greens.
