Lemon Tahini Dressing

Very Easy
Make enough to dress 5 cups mixed greens, such as mesclun and Bibb lettuce

1 clove smashed garlic

- pinch salt

- juice of 2 lemons

2 tbsp. sesame tahini

1/2 tsp. sugar

1/2 cup Kowalski’s Extra Virgin Olive Oil


Rub the inside of a wooden salad bowl with the garlic and salt. Remove garlic from the bowl, mince and return to bowl. Whisk in lemon juice, tahini and sugar; slowly stream in oil, whisking constantly and vigorously until dressing is emulsified. Add desired salad greens to bowl; toss. Serve immediately.
