Beer BBQ Sauce

Makes about 2 cups
2 tbsp. Kowalski's Extra Virgin Olive Oil
1/4 cup yellow onion
2 tsp. chipotle peppers in adobo sauce, finely minced
12 oz. beer
1/2 cup apple juice
3/4 cup ketchup
1/3 cup apple cider vinegar
1/4 cup dark brown sugar
1 tbsp. Worcestershire sauce
1 tbsp. Dijon mustard
- kosher salt and coarse black pepper, to taste

In a small saucepan over medium heat, cook onion in oil until soft (about 5 min.). Increase heat to high; add beer, juice, sugar, Worcestershire sauce and mustard. Reduce heat to low and cook, stirring occasionally, until thickened (about 30 min.). Season to taste. May be refrigerated, covered, up to 1 week.
