Bourbon Pineapple BBQ Sauce

Makes about 1 ¼ cups
  • 1 cup brown sugar
  • 3/4 cup bourbon
  • 3/4 cup pineapple juice
  • 1/4 cup apple cider vinegar
  • 1 tbsp. paprika
  • 2 tsp. finely minced garlic
  • 2 tsp. chipotle chiles in adobo, finely minced
  • 2 tbsp. honey
  • 2 tbsp. ketchup
  • 1 tbsp. Worcestershire sauce

In a small saucepan over medium-high heat, combine first seven ingredients. Bring to a boil; reduce heat to medium-low. Cook until reduced to about 1 cup. Stir in honey, ketchup and Worcestershire sauce. Cook until desired consistency is reached (5-10 min more).

Note: This recipe produces a thinner, sticky, glaze-like sauce that is very sweet with a moderate heat in the finish. Cook it a little more to thicken it, if desired.
