Turmeric Rice

Serves 4
  • 1 tbsp. unsalted butter
  • 2 tbsp. finely chopped yellow onion
  • 1/2 tsp. minced garlic
  • 1 cup basmati rice
  • 2 tsp. turmeric
  • 2 cups chicken broth
  • 1 bay leaf
  • 1/2 tsp. dried thyme
  • - salt and pepper, to taste
  • - extra virgin olive oil, to taste

Melt butter in a saucepan over medium heat. Add onion and garlic; cook until softened (about 5 min.). Add rice and turmeric; stir to coat. Add broth, bay leaf, thyme, salt and pepper. Cover and bring to a boil; reduce heat to low; simmer and cook according to package directions. Remove bay leaf; fluff rice with fork. Drizzle with oil and season with more salt and pepper to taste; toss gently to blend well.
